Authentic Hungarian Goulash (Gluten-Free)

Hungarian goulash can be served as a stew or as soup, depending on how much water you add to the goulash. The traditional Hungarian spices are what give this Goulash authentic and robust flavour. When serving the goulash as a stew traditionally you would add pasta, in this case, gluten-free pasta. Authentic Hungarian Goulash (Gluten-Free)

Ingredients
  1. 2 Tbsp. extra virgin olive oil (in Hungary they use bacon fat)
  2. 2 large yellow onions, thinly sliced (about 2 cups)
  3. 3 Tbsp. GF sweet Hungarian paprika, you can also use GF regular paprika"
  4. 2 tsp. GF dried marjoram leaves
  5. 2 tsp. GF caraway seeds
  6. GF Cayene pepper to taste (in Hungary it is served spicy)
  7. 2 lb. beef chuck or sirloin, cut into 1-inch cubes
  8. ½ cup red wine
  9. 1 cup pure diced tomatoes
  10. ¼ cup pure tomato paste
  11. 2 bay leaves
  12. 1 tsp. sea salt or to taste
  13. 2 - 3 cups water, or just enough water to cover the meat plus 1 inch
  14. 2 cups potatoes, cut into 1/2 –inch cubes
  15. 2 carrots, diced
  16. 1 red bell pepper, thinly sliced
  17. 1 cup sour cream (optional)
  18. Garnish with chopped fresh parsley

Instructions
  • In a large pot, heat up the oil to medium heat, add onions and sauté them for 5 minutes or until they start to turn nice golden colour
  • Stir in paprika, marjoram, caraway and cayenne and cook until just fragrant about 30 seconds
  • Add the beef and cook until all the sides are no longer pink, about 5 minutes
