BAILEYS BROWNIE CHEESECAKE

This Baileys Brownie Cheesecake is made with a dense, chewy chocolate brownie on the bottom topped with creamy Baileys cheesecake and finished off with Baileys chocolate ganache and whipped cream!

BAILEYS BROWNIE CHEESECAKE

INGREDIENTS
BROWNIE BOTTOM
  1. 10 tbsp (140g) unsalted butter, melted
  2. 1 cup (207g) sugar
  3. 1 tsp vanilla extract
  4. 2 eggs
  5. 3/4 cup (98g) all purpose flour
  6. 6 tbsp (43g) natural unsweetened cocoa
  7. 1/4 tsp baking powder
  8. 1/4 tsp salt

CHEESECAKE FILLING
  1. 24 ounces (678g) cream cheese, room temperature
  2. 1 cup (207g) sugar
  3. 3 tbsp (24g) all purpose flour
  4. 3/4 cup (173g) sour cream, room temperature
  5. 1/2 cup (120ml) Baileys Irish Cream
  6. 1/2 tsp vanilla extract
  7. 3 large eggs, room temperature

CHOCOLATE GANACHE
  1. 8 oz (227g) semi sweet chocolate chips
  2. 5 tbsp (75ml) Baileys Irish Cream
  3. 5 tbsp (75ml) heavy whipping cream

WHIPPED CREAM
  1. 1/2 cup (120ml) heavy whipping cream, cold
  2. 2 tbsp (30ml) Baileys
  3. 6 tbsp (43g) powdered sugar

INSTRUCTIONS
TO MAKE THE BROWNIE:
  • Preheat oven to 350°F (176°C). Line a 9-inch (23cm) springform pan with parchment paper in the bottom and grease the sides.
  • Combine the butter, sugar and vanilla extract in a medium sized bowl.
  • Add the eggs and mix until well combined.
  • In another medium sized bowl, combine the flour, cocoa, baking powder and salt.
  • Add the dry ingredients to the egg mixture and mix until well combined.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
