CREAMY VEGAN BROCCOLI CAULIFLOWER SOUP

INGREDIENTS
  1. 2 tbsp extra virgin olive oil
  2. 1 medium onion, chopped
  3. 2 cloves garlic, minced
  4. 2 carrots, diced
  5. 1 medium head broccoli, finely chopped (florets and stalk, about 4 cups)
  6. 1 medium head cauliflower, finely chopped (about 4 cups)
  7. 1 small-medium potato, diced
  8. 1/4 cup whole wheat pastry flour (or flour of choice)
  9. 4 cups vegetable broth
  10. 1 cup unsweetened, unflavored non-dairy milk
  11. 1/3 cup nutritional yeast
  12. 1 1/2 tsp kosher salt (to taste)
  13. Freshly ground black pepper
  14. 1 tbsp lemon juice

INSTRUCTIONS
  • Heat oil in a soup pot or Dutch oven over medium heat. Add onion, 1/2 tsp salt, and a grind of pepper and sauté for 5 minutes, or until softened. Add garlic and cook for another minute.
  • Add carrots, broccoli, cauliflower, and potato and sauté for another 3-5 minutes. Add flour and stir well to combine.
