Dulce de Leche Cheesecake with Brownie Crust

INGREDIENTS:
FOR THE CRUST:
  1. 3 ounces bittersweet chocolate
  2. 1/4 cup unsalted butter
  3. 1/2 cup granulated sugar
  4. 1 large egg
  5. 1 teaspoon vanilla extract
  6. 1/2 cup all-purpose flour
  7. 1/4 teaspoon salt

FOR THE FILLING:
  1. 24 ounces cream cheese, at room temperature
  2. 1/2 cup packed light brown sugar
  3. 3 large eggs
  4. 1 & 1/2 teaspoons vanilla extract
  5. 1 cup dulce de leche

FOR THE WHIPPED CREAM:
  1. 3/4 cup heavy cream
  2. 1 tablespoon granulated sugar
  3. 3 tablespoons dulce de leche
  4. chocolate shavings, for garnish

DIRECTIONS:
TO MAKE THE CRUST:
  • Preheat oven to 350°F. Grease a 9-inch springform pan.
  • Place the chocolate and butter in a microwave-safe bowl. Heat at half power in microwave in 30-second increments until butter has melted and chocolate melts when stirred. Stir until smooth. Set aside to cool slightly.
