This Frosted Circus Animal Cookie Cake is made with pink and white layers of vanilla cake, filled with a crushed up frosted animal cookie filling and covered in white chocolate buttercream!
FROSTED CIRCUS ANIMAL COOKIE CAKE

INGREDIENTS
VANILLA CAKE

  1. 2 1/2 cups (325g) all purpose flour
  2. 2 1/2 tsp baking powder
  3. 1/2 tsp salt
  4. 3/4 cup (168g) unsalted butter, room temperature
  5. 1 1/2 cups (337g) sugar
  6. 3 tbsp vegetable oil
  7. 4 large eggs
  8. 1 tsp vanilla extract
  9. 1 1/4 cups (300ml) milk
  10. Pink gel icing color
  11. Ivory gel icing color

FROSTED ANIMAL COOKIE FILLING

  1. 1/2 cup unsalted butter, room temperature
  2. 2 1/2 cups (317g) frosted animal cookie crumbs
  3. 1 cup (115g) powdered sugar
  4. 7-8 tbsp milk or water
  5. 1/4 tsp vanilla extract
  6. Pinch of salt
  7. 15 frosted animal cookies, crumbled

WHITE CHOCOLATE BUTTERCREAM

  1. 1 1/4 cups (280g) unsalted butter, room temperature
  2. 12 oz white chocolate chips, melted
  3. 6 cups (690g) powdered sugar
  4. Pinch of salt
  5. 5-6 tbsp (60-75ml) heavy whipping cream
  6. Sprinkles

PINK CHOCOLATE GANACHE

  1. 6 oz white chocolate chips
  2. 1/4 cup heavy whipping cream
  3. Pink gel icing color


INSTRUCTIONS

  • To make the cake layers, prepare two 8 inch cake pans with parchment paper circles in the bottom and grease the sides. Preheat oven to 350°F (176°C).
  • Combine the flour, baking powder and salt in a medium sized bowl and set aside.
  • Add the butter, sugar and vegetable oil to a large mixer bowl and beat together until light in color and fluffy, about 3-4 minutes. Do not skimp on the creaming time.
  • Add the eggs and mix until completely combined and smooth. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated.
  • Add half of the dry ingredients to the batter and mix until mostly combined.
  • Add the vanilla extract and milk and mix until well combined. The batter will look a little curdled, but that’s ok.
