Healthy Thai Peanut Chicken Zucchini Noodles with a fresh peanut lime sauce mixed with veggie noodles makes a perfect light meal and lunch the next day!

HEALTHY THAI PEANUT CHICKEN ZUCCHINI NOODLES

INGREDIENTS
  1. 1 clove garlic minced
  2. 2 teaspoons fresh ginger minced
  3. 4 tablespoons peanut butter
  4. 1 lime zested and juiced
  5. 2 tablespoons soy sauce
  6. ¼ teaspoon red pepper flakes
  7. 2 tablespoons canola oil
  8. 2 cups chicken breast cooked and shredded
  9. 3 zucchini spiral sliced
  10. 2 large carrots spiral sliced
  11. 1 red pepper spiral sliced
  12. 1/3 cup fresh cilantro chopped
  13. 1/4 cup green onions diced
  14. chopped unsalted roasted peanuts and lime wedges (optional as a garnish)

INSTRUCTIONS
  • Add the garlic, ginger, peanut butter, lime juice and zest, soy sauce and red pepper flakes to a small bowl and mix together.
  • To a large frying pan add your canola oil on high heat.
