Lemon Blueberry Parfaits

Ingredients
  1. 1 1/2 cups blueberries, fresh or frozen
  2. 1/3 cup water
  3. 1/4 cup granulated sugar
  4. 2 cups heavy cream
  5. 1/4 cup honey
  6. 1 cup lemon curd (approx.)
  7. 1 tablespoon lemon zest (about half a lemon), for garnish

Instructions
  • Stir the blueberries, water, and sugar together in a small pot.  
  • Cook over medium-low heat until thick, syrup-y and reduced by half (5-10 minutes).  Cool completely.
