Miniature Blackberry Cheesecakes with whipped cream & warm blackberry compote!

Miniature Blackberry Cheesecakes

Ingredients
  1. Cream Cheese 1½ cups (340g)
  2. Granulated Sugar ¾ cup (150g)
  3. Eggs large 2 (100g)
  4. Vanilla Extract 2 teaspoon (10ml)
  5. Lemon Zest from 1 lemon
  6. Blackberry Puree ¾ cup (195g)
  7. Golden Oreos 10
  8. Crystalized Mint Leaf *optional garnish
  9. ½ cup heavy cream (120ml)
  10. 2 Tablespoons granulated sugar (28g)

Instructions
  • Crush the golden Oreos in a food processor until fine crumbs
  • Press 1 tablespoon into the bottom of each cavity of the miniature cheesecake pan
  • Cream the softened cream cheese with the granulated sugar until smooth
  • Add the vanilla extract and lemon zest
  • Add the eggs one at a time and be sure to scrape the bottom & sides of the bowl after each addition
  • Add the blackberry puree and mix well.
