Oreo Cream Cheese Red Velvet Cupcakes

These are not only a really pretty cupcake, they are delicious and a real crowd pleaser. I loved the Oreo on the bottom - it's a hidden treat! The frosting is perfect and tastes like cookies and cream ice cream. Kids - big and small - are going to love these!

Oreo Cream Cheese Red Velvet Cupcakes

Ingredients:
  1. 1 box red velvet cake mix
  2. 3 eggs
  3. 1/2 c oil
  4. 1 c sour cream
  5. 1/2 c milk
  6. 2 tsp vanilla extract
  7. 24 Oreo cookies

OREO CREAM CHEESE FROSTING:
  1. 10 Oreo's, twist and scrape off (or eat) the cream filling
  2. 1/2 c butter, softened
  3. ·8 oz. cream cheese (room temp)
  4. 2 tsp vanilla extract
  5. 4 c powdered sugar
Method:
  • Preheat oven to 350 degrees and line pans with cupcake liners.
  • Sift cake mix into a small bowl and set aside.
  • In a large bowl, combine eggs, oil, sour cream, milk and vanilla extract until smooth
  • Stir in cake mix into wet mix, mixing well.
  • Take your Oreo's and place one at the bottom of each cupcake liner.
  • Scoop batter over each Oreo to fill the liners about 3/4 full.
  • Bake for 15-20 minutes or until an inserted knife comes out clean. Let cool.
  • While those are cooking, take your Oreo cookies (just the chocolate pieces and not the filling) and crush in a plastic bag using a rolling pin.
  • In a medium bowl beat butter and cream cheese together. Add vanilla extract and slowly add powdered sugar 1 cup at a time beating to make smooth.
  • When you have that all mixed sift your crushed Oreos into the mixture. Any broken up chunks left in the sifter put aside.
