Quinoa Tabbouleh Salad

Use quinoa to make some tabbouleh – it’s the perfect side dish that goes with almost anything! This healthy quinoa salad recipe is a vegan, gluten-free and full of antioxidants!
Quinoa Tabbouleh Salad

Ingredients

  1. 1 cup quinoa, cooked
  2. 1 cup parsley, chopped
  3. 1/2 cup arugula, chopped
  4. 1 red onion, chopped
  5. 1 medium tomato*, chopped
  6. peel of 1/2 lemon**, grated
  7. 1/2 lemon, juice of
  8. 1 tbsp olive oil
  9. salt to taste
  10. black pepper

Instructions

  • Chop all vegetables into the smallest pieces your knife skills allow you to. Add all vegetables and the rest of the ingredients to a salad bowl and mix well together. Add salt and pepper to taste and serve immediately.
