SUSHI BOWL WITH VEGAN SPICY MAYO

These sushi bowls are here to satisfy any sushi craving that might come your way. If you don’t feel like take-out or making your own rolls, through all your favourite sushi ingredients in a bowl and call it a day!

SUSHI BOWL WITH VEGAN SPICY MAYO

INGREDIENTS
For the Spicy Mayo
  1. 1/2 cup raw cashews
  2. 5 tbsp water (plus more to adjust consistency, if desired)
  3. 1 tbsp fresh lime juice or rice vinegar
  4. 1/2 tsp sea salt
  5. 2 tsp pure maple syrup
  6. 2 tsp soy sauce
  7. 1 tbsp + 1 tsp sriracha sauce

For the Sushi Bowls
  1. brown, wild or white rice
  2. julienned carrot
  3. diced cucumber
  4. diced avocado
  5. shelled edamame
  6. cooked and cubed sweet potato (boil, steam or bake)
  7. nori sheets or snacks, cut into strips or crumbled
  8. sesame seeds, for topping
  9. chopped green onion, for topping
  10. soy sauce, for topping

INSTRUCTIONS
  • To make the spicy vegan mayo, blend all ingredients until smooth and creamy.
