Vegan French Onion Stew

This vegan French onion stew is packed with savory, plant-based flavor! This also doubles as a delicious gravy for Thanksgiving!

Vegan French Onion Stew

Ingredients
  1. 2 Medium Red Onions cut in half and sliced
  2. 1 Yellow Onion cut in half and sliced
  3. Neutral Vegetable Oil for sauté
  4. 2 Cloves Garlic minced
  5. 1 Cup French or Green Lentils
  6. 6 Cups Vegetable Broth
  7. 1 Tsp Fresh Thyme
  8. Generous Salt to taste
  9. Black Pepper to taste

Instructions
  • Add some neutral vegetable oil to a large pot and bring to medium heat. Add in the sliced onions and cook down for about 30 minutes, covered. Stir occasionally until onions are soft and caramelized.
  • Then, add in the minced garlic and sauté until fragrant, about 1 minute.
  • Then add in all other ingredients and simmer for about 30-45 minutes, uncovered, until lentils are fully soft.
