VEGAN TRIPLE CHOCOLATE CUPCAKES

A delicious vegan cupcake recipe that features chocolate cupcake, chocolate frosting, and chocolate toppings! 

VEGAN TRIPLE CHOCOLATE CUPCAKES

INGREDIENTS
  1. 3/4 cup almond milk
  2. 1 tsp apple cider vinegar
  3. 1/3 cup coconut oil, melted
  4. 1 tsp vanilla extract
  5. 1 cup spelt flour
  6. 2 tsp instant espresso (can sub 2 tbsp brewed espresso)
  7. 3/4 cup organic cane sugar
  8. 5 tbsp cocoa powder
  9. 1/2 tsp baking powder
  10. 3/4 tsp baking soda
  11. 1/4 tsp salt

Chocolate frosting:
  1. 1 cup vegan butter
  2. 1/2 cup cocoa powder
  3. 4 cups powdered sugar
  4. 1/4 cup almond milk
  5. 1 tsp vanilla extract
  6. pinch of salt
Other:
  1. Sprinkles
  2. Chocolate chips 
INSTRUCTIONS
Cupcakes: 
  • Preheat the oven to 350 degrees F and line a cupcake pan with cupcake liners
  • Mix the almond milk and apple cider vinegar and set aside for 5 minutes to turn to “buttermilk.”
  • Next, add the coconut oil and vanilla extract.
  • Mix all the dry ingredients together in a bowl.
