Vegetable Stuffed Portabella Mushrooms

These little beauties are as spectacular as they look.  If you adore chocolate then this is the treat for you! Layer upon layer of chocolate and they all marry well together from the crust to the cheesecake and ganache to the whipped cream and Hershey bar on top! Vegetable Stuffed Portabella Mushrooms

Ingredients
Crusts

  1. 1 cup oreo cookie crumbs
  2. 2 T. melted butter

Cheesecake

  1. 12 ounces soft cream cheese
  2. ½ cup sugar
  3. 2 T. unsweetened cocoa powder
  4. ¼ cup sour cream
  5. ½ tsp vanilla
  6. 2 eggs
  7. 4 oz melted dark chocolate

Ganache

  1. 3 oz semi sweet chocolate chips
  2. ¼ cup heavy cream

Whipped Cream

  1. ¾ cup heavy cream
  2. 3 T. powdered sugar
  3. 3 T. unsweetened cocoa powder
  4. ½ tsp vanilla extract
  5. Hershey bars for garnish

Instructions

  • Preheat oven to 325°F
  • Line pan with cupcake lines.
Crust
  • Mix cookie crumbs and butter and press into 12 cupcake cups.
  • Bake 5 mins.
Filling
  • Lower oven to 300.
  • Beat cream cheese, sugar and cocoa on low.
  • Add sour cream and vanilla.
  • Add eggs one at a time.
  • Add the melted chocolate.Bake 15 mins then shut oven heat off and leave them in the oven for 10 mins. Then, Crack the door open and leave them in for an additional 20 mins. Chill in fridge.
