WHOLE30 CHINESE CHICKEN SALAD

A vibrant and crunchy Chinese Chicken Salad, kept extra clean for the Whole30. This salad has natural sweetness and tons of crunch! It keeps well refrigerated for days, so is ideal for meal prep.
WHOLE30 CHINESE CHICKEN SALAD

INGREDIENTS
Ginger Chicken

  1. 1 pound chicken breasts
  2. 1/3 cup coconut aminos
  3. 2 tablespoons ginger grated
  4. 2 cloves garlic minced
  5. 3/4 teaspoon sea salt
  6. pinch chili flakes

Salad

  1. 6 cups savoy cabbage chopped
  2. 1 cup red cabbage chopped
  3. 3 carrots julienned
  4. 6 mandarin oranges peeled and segmented
  5. 1 cup green onions chopped
  6. 1/3 cup almonds toasted (or sub toasted sunflower seeds)

Dressing

  1. 1/3 cup SunButter Organic
  2. 6 tablespoons coconut aminos
  3. 3 tablespoons sesame oil
  4. 1/3 cup rice wine vinegar
  5. 1 1/2 tablespoons ginger grated

INSTRUCTIONS

  • Add all ingredients for chicken together in a bowl, and put in the refrigerator for 1 hour to marinate.
  • Add all ingredients for dressing to a blender, and process until smooth and creamy.
  • In a large mixing bowl, combine cabbage and carrots. Toss in dressing.
  • Grill or pan fry chicken until cooked through.
