ALMOND JOY PIE

This Almond Joy Pie is pure coconut heaven! With all the sweets in our house right now, this is the one I cannot. stop. eating. I imagined it to be good, but not this good! And even though you have to use the stove a little bit, there’s no actual baking required so it’s super easy to make!

ALMOND JOY PIE

INGREDIENTS
OREO CRUST
  1. 2 cups Oreo crumbs
  2. 4 tbsp butter, melted

COCONUT FILLING
  1. 2 tbsp + 2 tsp cornstarch
  2. 1 1/2 cups milk
  3. 1/2 cup sugar
  4. 14oz can sweetened condensed milk
  5. 1 1/2 cups flaked coconut
  6. 1/2 tsp vanilla extract
  7. 1/2 tsp coconut extract

TOPPING
  1. chocolate sauce for topping
  2. flaked coconut
  3. whipped cream
  4. almond slices

INSTRUCTIONS
  • Add melted butter to oreo crumbs and mix until combined.
  • Press oreo mixture evenly into the bottom and up the sides of a 9 inch pie pan, then set aside.
  • Whisk the cornstarch and 1/4 cup milk together in a small bowl. Set aside.
  • Add remaining milk, sugar, sweetened condensed milk, flaked coconut, vanilla and coconut extract to a pan and whisk over medium heat until well combined and warm.
  • Add the cornstarch mixture to the coconut mixture.
