Baked Cuban Mojo Chicken

Roasted chicken marinated in a fantastic Cuban Mojo marinade! it’s citrusy, garlicky, with fresh lime flavours and cilantro. Packs some serious flavours!

Baked Cuban Mojo Chicken

Ingredients
  1. 2 lb bone in chicken thighs and chicken drumsticks about 8 pieces total

MARINADE:
  1. 1/3 cup extra virgin olive oil
  2. 1/2 cup cilantro leaves lightly packed
  3. 1 tsp orange zest
  4. 1/3 cup orange juice fresh
  5. 1/4 cup lime juice
  6. 3/4 tsp dried oregano
  7. 1 tsp cumin powder
  8. 1 1/2 tbsp fresh mint leaves
  9. 4 garlic cloves
  10. 1 tsp salt
  11. 1/2 tsp black pepper

GARNISHES (OPTIONAL):
  1. 1 orange cut into wedges
  2. Cilantro leaves for garnish

Instructions
  • Place Marinade ingredients in a food processor. Whizz until the cilantro is finely chopped.
  • Pour Marinade over chicken in a large bowl. Cover with cling wrap and marinade for 12 – 36 hours.
