Barley Soup

Homemade healthy barley soup recipe. A perfect option to add whole grains to your diet. Ready to enjoy in about 30 mins.

Barley Soup

Ingredients
  1. 3/4 cup whole barley
  2. 1 celery stalk finely diced
  3. 1 onion finely diced
  4. 1/2 cup finely diced carrots
  5. 1 tomato finely diced
  6. 2-3 cloves garlic finely chopped
  7. 3 cups chicken broth (or vegetable broth if vegan)
  8. 2 cups water
  9. 1 tsp finely chopped ginger
  10. 1/4 cup chopped spring onions
  11. 1 tbsp avocado oil or cooking oil
  12. 1 tsp dried thyme
  13. salt and pepper

Instructions
  • Heat oil in a large pot over medium heat. Add ginger, garlic and saute until fragrant for about 30-40 sec
  • Add onions and saute until lightly golden brown for about a min. or two
  • Then add all the remaining ingredients except spring onions and let it boil.
