Chicken Taco Lettuce Wraps

When you’re craving a taco but not the carbs, reach for these Chicken Taco Lettuce Wraps. They are just the thing to satisfy a craving and squash any guilt.  They’re healthy, fresh, flavorful, and can you’ll love to eat them for lunch, dinner, or a great snack. With deliciously seasoned chicken, fresh tomatoes and red onion, and of course avocado, these tacos have a little bit of everything. 

Chicken Taco Lettuce Wraps

Ingredients
Grilled Taco Chicken
  • 1 pound chicken breast Boneless, skinless
  • 2 tablespoons taco seasoning
  • 2 cloves garlic minced
  • 2 tablespoon olive oil divided

To Assemble
  • 8 leaves Butter Lettuce rinsed
  • 1 avocado diced
  • 1 tomato diced
  • 1/4 cup onion diced

Cilantro Sauce
  • 1/2 cup cilantro loosely packed
  • 1/2 cup Greek Yogurt or sour-cream or mayo
  • 2 tablespoons olive oil
  • 1 jalapeno optional
  • 1 clove garlic minced
  • Juice of 1/2 lime
  • 1 Pinch of salt

Instructions
To Cook Chicken
  • Pound chicken with a mallet to even thickness or butterfly so it is thinner.
  • Mix the spices together with 1 Tbs olive oil.
  • Rub all over the chicken.
  • Heat 1 Tbs olive oil over medium high heat in a large skillet.
  • Place chicken on the skillet, and let the chicken cook 6-7 minutes per side until cooked through (until it has reached an internal temperature of 165 degrees F).

To Make Cilantro Sauce
  • Place all the ingredients in the food processor and blend for 1 minute or until creamy.

To Assemble
  • Layer lettuce wraps with chicken, tomatoes, onion, and avocado. Drizzle with cilantro sauce.
