CHOCOLATE COCONUT ENERGY BALLS

These Whole30 / Paleo chocolate coconut energy balls are an amazing midday snack and energy boost! Sweetened only with dates and super easy to make, they taste decadent, similar to an almond joy, but are 100% guilt-free.
CHOCOLATE COCONUT ENERGY BALLS

INGREDIENTS

  1. 1/2 cup pecans (or other nut)
  2. 15 whole dates, pitted and roughly chopped
  3. 1/3 cup shredded unsweetened coconut (plus 1/4 cup for rolling)
  4. 1 tablespoon coconut oil
  5. 1 1/2 tablespoons cocoa powder
  6. pinch of salt
  7. 1 tablespoon water


INSTRUCTIONS

  • Put pecans in food processor and pulse until roughly chopped.
  • Add remaining ingredients, turn food processor on until well mixed.
  • Using a tablespoon measure, spoon out mixture and roll in balls.
  • Coat each ball in the remaining 1/4 cup shredded coconut.
