A classic Tom Collins is a refreshing mix of Gin, fresh lemon juice, simple syrup and soda all topped off with a bright red maraschino cherries.

What possibly started out as the John Collins in London, John Collins was the name of the head waiter who worked at Limmer’s Old House in the Mayfair area of London. The first Tom Collins drink dated back to 1876 so this drink has some history. With over 18 other ‘Collin’s drinks, the Tom Collins is still the most popular and makes appearances in movies and TV shows like Meet the Parents and Mad Men. Cheers.

CLASSIC TOM COLLINS

INGREDIENTS
  • 3 ounces gin
  • 2 ounces lemon juice
  • 1 ounce simple syrup * see note
  • Club soda
  • Maraschino cherries for garnish
INSTRUCTIONS
  • Pour the gin, lemon juice and simple syrup into a tall glass with ice.
  • Stir until combined.
  • Top up with club soda and garnish with the cherries.
