Crock Pot Chicken Tortilla Soup

Zesty chicken tortilla soup made in the crock pot. This is a great way to enjoy a Mexican at home!

Crock Pot Chicken Tortilla Soup

Ingredients
  1. 3 boneless skinless chicken breasts, frozen
  2. 1 (4oz) can chopped green chillies, drained
  3. 2 cloves garlic, minced
  4. 1 (15oz) can diced tomatoes
  5. 1 c. chicken broth
  6. 1 c. half and half OR heavy cream
  7. 1 tsp. cumin
  8. 1 tsp. salt
  9. salt and pepper
  10. corn tortilla chip strips OR crushed up tortilla chips
  11. 2 Tbsp cilantro, chopped
  12. 1 lime, cut into wedges

Instructions
  • Place chicken breasts in the crock pot. In a separate bowl combine diced tomatoes (including liquid), chillies, garlic, chicken broth, cumin, and salt. Mix together and pour over chicken.
  • Cook on low 5-5 1/2 hours, or until chicken is cooked. Remove chicken from the crock pot and shred with two forks; place back in the crock pot.
