Easy Fried Rice

Chinese fried rice recipe made with fragrant jasmine rice, carrots, peas, and scrambled eggs. Put down the takeout menu and make your own!
Easy Fried Rice

Ingredients

  1. 1 cup uncooked jasmine rice, (180g)
  2. 2 cups water, (480ml)
  3. 2 tablespoons vegetable oil, (30ml) divided
  4. 1/4 cup minced white onion, (30g)
  5. 1 tablespoon minced garlic, (10g)
  6. 1/2 cup diced carrots, (70g) 1/4-inch dice
  7. 1 teaspoon sesame oil , (15ml)
  8. 2 large eggs, whisked
  9. 1/2 cup peas, (65g) frozen, defrosted
  10. 1 tablespoon soy sauce , (15ml)
  11. kosher salt, as needed for seasoning
  12. white pepper, as needed for seasoning
  13. 2 tablespoon thinly sliced green onions, (6g)

Instructions

  • In a 3-quart sized saucepan, rinse uncooked rice with cool water until it runs clear, then drain off excess water.
  • Add 2 cups of water to the washed rice.
  • Bring water to a boil and then turn down heat to a simmer and cover with a lid.
