Limoncello Cake

For the Cake

  1. 2 1/2 cups flour
  2. 1 teaspoon baking soda
  3. 1/2 teaspoon salt
  4. 1/2 cup butter (softened)
  5. 1 1/2 cups sugar
  6. 3 eggs
  7. 1/2 cup buttermilk
  8. 1/2 cup limoncello (lemon-flavored liqueur)
  9. Zest and juice of 1 lemon
  10. Optional: white chocolate shavings
  11. For the Mascarpone Frosting
  12. 16 ounces mascarpone cheese
  13. 1 1/4 cups lemon curd
  14. 2 cups chilled whipping (or heavy cream)
  15. 2/3 cups powdered sugar

Make the Limoncello Cake

  • Gather the ingredients.
  • Preheat oven to 350 F.
  • Lightly grease two 9-inch round cake pans and then line them with parchment paper. Grease and flour the parchment paper as well.
  • Combine flour, baking soda, and salt with a wire whisk. Set aside.
  • Cream the butter and sugar.
