Malteser Bunny Chocolate Cupcakes - Conventional Method

Ingredients
For the cupcakes

  1. 125 g butter softened
  2. ¾ cup caster sugar
  3. 2 eggs lightly beaten
  4. 1 teaspoon vanilla extract
  5. 11/4 cups self raising flour
  6. ⅓ cup cocoa
  7. ⅔ cup milk
  8. For the frosting
  9. 220 g dark chocolate
  10. 230 g butter solftened
  11. 1 1/2 tbs milk
  12. 170 g icing sugar
  13. 12 mini Malteser bunnies
  14. 4 large Malteser bunnies crushed

Instructions

  • Preheat oven to 170°C.
  • Line 12 muffin holes with patty paper or cupcake holders.
  • Using hand-held beaters or a stand mixer, cream the butter and sugar together until light and fluffy.
  • Add the eggs and vanilla and beat until well combined.
