MEXICAN STREET CORN

Mexican Street Corn is a easy peasy side dish and a perfect side dish for any Mexican or Tex-Mex inspired meal. It’s got a bunch of flavor and you can spice it up as much as you’d like!

MEXICAN STREET CORN

Ingredients
  1. 3 cups corn kernels cooked
  2. 1/4 cup light mayo
  3. 2 tbs non fat sour cream
  4. 3 1/2 tbs Ground Cotija Cheese Queso Fresco works well too
  5. 1 tsp chili powder
  6. 1/4 tsp cayenne pepper
  7. juice of one lime
  8. hot sauce of your choice for topping
  9. green onions optional
  10. cilantro optional

Instructions
  • Mix corn, mayo, sour cream, green onions, cayenne pepper, chili powder, juice of one lime, and Queso Cotija together until well combined.
  • Heat in a small pan over medium heat for 3-5 minutes until heated through. (You can also heat up in the microwave for 1 1/2- 2 minutes)
