MINESTRONE SOUP (30 MINUTE)

Healthy Vegan Minestrone Soup packed with beans, veggies, and pasta! An easy vegan weeknight meal that's super customizable.

MINESTRONE SOUP (30 MINUTE)

INGREDIENTS
  1. 1 onion
  2. 2 medium carrots
  3. 3-4 cloves garlic
  4. 15 oz. can diced tomatoes
  5. 15 oz. can tomato sauce
  6. 15 oz. can kidney beans
  7. 4 cups vegetable broth
  8. 1 1/3 cups pasta (uncooked, gluten-free if desired)
  9. 1 1/2 cups cut green beans (I use frozen)
  10. 1 tsp. dried basil
  11. Salt to taste
INSTRUCTIONS
  • Dice onion and carrot.
  • In a stockpot over med-high heat, saute onion and carrot in 3 Tbsp. broth/water for about 7-8 minutes. (Adding more liquid as necessary.)
  • Meanwhile, mince garlic.
  • When onion is translucent, add garlic and 1 tsp. basil. Saute 1 minute.
  • Add 4 cups broth, diced tomatoes with juice, and tomato sauce. Increase heat and bring to a light boil.
