Slow Cooker Chicken Thighs

Not mad at all about how easy these are. Crockpot Chicken Thighs in Soy, Ketchup, Honey, Garlic, Ginger, Sriracha, and Lime Sauce with Cilantro.

Slow Cooker Chicken Thighs

INGREDIENTS
  1. 1 tbsp. extra-virgin olive oil
  2. 6 bone-in or boneless chicken thighs
  3. Kosher salt
  4. Freshly ground black pepper
  5. 1/2 c. low-sodium soy sauce
  6. 1/2 c. ketchup
  7. 1/4 c. honey
  8. 3 cloves garlic, minced
  9. 1/2 oz. freshly minced ginger
  10. 2 tbsp. Sriracha
  11. Juice of 1 lime
  12. Cooked rice, for serving

DIRECTIONS
  • In a large skillet over medium-high heat, heat oil. Season chicken thighs with salt and pepper and sear until golden, 3 minutes per side. Transfer to slow cooker. 
  • In a small bowl, whisk together soy sauce, ketchup, honey, garlic, ginger, Sriracha, and lime juice. Pour sauce over chicken and toss until coated.
