Spanish Cauliflower Rice

Ingredients
  1. 16 ounces cauliflower
  2. 1 tablespoon olive oil
  3. 1/3 cup tomato sauce
  4. 1/4 cup chicken or vegetable broth
  5. 1 teaspoon minced garlic
  6. 1 teaspoon onion powder
  7. 1/2 teaspoon ground cumin
  8. 1/2 teaspoon sea salt
  9. 1/4 teaspoon black pepper
  10. 1 tablespoon fresh lime juice
  11. 1/4 cup cilantro chopped

Instructions
  • Cut cauliflower into florets. Place in a food processor and process until “riced”.
  • Heat olive oil over medium heat in a large skillet. Add cauliflower and cook for five minutes.
