Tofu Sticks and Chips

Tofu sticks with very crisp crust and a super soft center, a delicious seasoning to the complementing textures is what makes this recipe a winner!

Tofu Sticks and Chips

Ingredients
  1. 1 block (14 Oz/400g)Extra firm Tofu
  2. 1/2 cup Rice flakes (poha)
  3. 1/2 cup Panko Bread crumbs (or any other bread crumbs)
  4. 1/2 cup Corn starch
  5. Water to make a batter with corn starch
  6. Salt to season
  7. 1 tsp Garlic powder
  8. 1 tsp Paprika
  9. Oil for frying
Directions
  • Cut the extra firm tofu into slices (rectangles as shown in the picture). Place them on paper towels and some heavy weight to drain off excess water.
  • After about an hour, rub either side of the tofu with salt and red chili powder, cover with a damp towel and let it rest for another half hour.
  • Mix corn starch with water and a pinch and set aside.
  • Pulse the rice flour and seasoning (garlic powder, paprika, crushed black pepper and salt) together in a blender. Make it fine enough to coat well but coarse enough to bring out flavor and crunch.
  • It is important to season all three layers. That is tofu, corn starch batter and the rice flakes-bread crumbs mixture. Failing to do so could lead to bland tofu sticks but be careful and bear in mind that salt gets triple layered. Use your judgement to use the right amounts.
  • Heat the oil for frying.
  • Cut the tofu slices into finger sized sticks.
