Whole30 Meatless Buffalo Burgers

Whole30 Meatless Buffalo Burgers

Ingredients
  1. 4 cups riced cauliflower (roughly 1/2 large head of cauliflower)
  2. 1/2 cup cooked, mashed sweet potato
  3. 2 eggs
  4. 3 tablespoons buffalo sauce (or more depending on your heat level)
  5. 1/2 cup finely diced yellow onion
  6. 1 cup + 2 tbsp almond flour
  7. 1/2 teaspoon salt (or more if desired)

Instructions
  • Preheat oven to 375
  • Combine the uncooked, riced cauliflower with the mashed sweet potato, eggs, buffalo sauce, yellow onion, almond flour, and salt. Mix well to incorporate the mashed sweet potato evenly
  • Line a baking sheet with parchment paper and scoop out roughly 1/2 cup of the meatless burger mixture. Gently mold into a patty roughly 1-inch thick then place on the baking sheet – the mixture will be very wet, so handle with care. Patties can also be flattened after placing on the parchment paper
