Cherry Limeade Cupcakes

Cherry Limeade Cupcakes

Ingredients
Cupcakes:
  1. 1 1/2 cup cake flour
  2. 1 tsp baking powder
  3. 1/8 tsp baking soda
  4. 1/4 tsp salt
  5. 1 cup sugar
  6. 1/2 cup unsalted butter (softened)
  7. 2 large egg
  8. 1 large egg whites
  9. 1/2 tsp vanilla extract
  10. 1/3 cup whole milk
  11. 1 1/2 Tbsp fresh lime juice

Frosting:
  1. 1 cup unsalted butter (softened)
  2. 1 cup powdered sugar
  3. 1 tbsp heavy whipping cream
  4. 1 tsp cherry extract
  5. red gel food coloring

Instructions
  • Preheat oven to 350 degrees. Line the cupcake tins with paper liners.
  • Mix the flour, sugar, baking soda, baking powder, and salt in a bowl.
  • In a separate bowl add the eggs, whole milk, oil, and lime extract.
  • Add the bowl containing the eggs, whole milk, oil, and vanilla to the bowl holding the dry ingredients.
  • Mix all together until fully incorporated.
  • Beat for 3 minutes on medium.
  • Slowly add the boiling water starting with a small amount then pour in the remaining boiling water.
  • The batter may be a little runny.
  • Scoop batter into cupcake paper liners until 3/4 full.
  • Bake at 350 degrees for 20-25 minutes.
  • Remove from oven and allow to cool for 10 minutes.
  • Remove from cupcake tin and place on a wire rack to cool completely before frosting.
