LEMON LIME LAYER CAKE

LEMON LIME LAYER CAKE

Ingredients
Lemon Cake:
  1. 1 cup 2 sticks unsalted butter, room temperature, plus more for pans
  2. 2 1/2 cups all-purpose flour spooned and leveled, plus more for pans
  3. 1/2 teaspoon baking powder
  4. 1/2 teaspoon baking soda
  5. 1 teaspoon salt
  6. 1 tablespoon lemon zest
  7. 1 1/2 cups sugar
  8. 2 large eggs plus 3 large egg yolks
  9. 1/4 cup fresh lemon juice
  10. 1 cup low-fat buttermilk

Lime Buttercream:
  1. 7-8 cups confectioners' sugar
  2. 2 limes juiced
  3. 6 tablespoons lime zest
  4. 1 cup butter softened to room temperature
  5. 8-10 tablespoons milk

  • Preheat oven to 350 degrees.
  • Lightly spray with baking oil and flour two 8-by-2-inch cake pans. Make sure to tap out the excess flour. In a bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest.
